What does low overrun mean?
Overrun is a term applied to the amount of air it contains. Most low-cost ice creams are 100% overrun; Spotted Dog is approximately 32%. By having lower overrun the ice cream has less volume resulting in a denser, creamier and more satisfying product.
What is butterfat?
Butterfat is the fatty particles in milk that are separated out to make cream and subsequently butter. Most ice creams top out with a butterfat content of 10%, Spotted Dog Creamery starts at 15% thus making our ice cream rich and complex.
